Happy Sunday! Connor and I are currently on day eight of (modified) Whole30. This is the third time we've done it, but the first time I've done it as a vegetarian. We made some modifications to it since I don't eat meat, but overall, I'm feeling great. Although, it does suddenly seem like everyone is eating pizza and drinking wine...

A few thoughts on Whole30

Anyone who has successfully done Whole30 will tell you it's a testament of will power more than anything. If you're interested in doing it, I highly encourage you to have someone to do it with as there will be days when running to grab a sandwich seems much easier than cooking your lunch. 

If you keep enough food in the house that is compliant, it makes everything much easier. 

You will feel better after you complete it, and realize what foods make you feel sick. 

If you're a vegetarian, there aren't a whole lot of great recipes out there like there are for meat eaters. Here is a list of strictWhole30 foods. We have modified quite a few recipes we already make and often use tofu or eggs for some recipes as a meat replacement. 

The modification I've made is allowing myself to eat quinoa. After doing Whole30 a couple of times, I know that my body does fine eating this. 

Eats This Week

Truthfully, we had a few misses this week. This happens when you're trying new recipes. We did have a few wins, though. 

Sweet potato burgers. These were SO good. We skipped the aioli and just did guac. 

Zoodle Pho with baked tofu. We modified this recipe a bit since neither of us eat chicken, but it was delicious. We added some broccoli and mushrooms as well. We used aminos instead of soy sauce, and skipped the maple syrup. 

Vegetable soup. We both love soup, but sometimes it doesn't feel filling without bread. This one, however, was super filling and delicious. 

Reads This Week

This hair tutorial from a little girl is me every day. 

Makenzie's 101 in 1001 days inspired me to do my own. I'm compiling the list and it will be up soon. 

Some bad news for cheese-lovers. I'm a believer in everything in moderation, but this is a good read. 

This article made me CRY hard.
